  1. To make patties, combine all ingredients in a bowl. Mix well. Roll and shape heaped tablespoons of mixture into patties (makes 8).
  2. Heat oil in a medium frying pan over a medium-high heat. Add patties. Cook for about 2-3 minutes on each side, or until cooked through. Remove.
  3. Meanwhile, combine vinegar and sugar in a small saucepan. Season with salt. Stir over low heat until sugar is dissolved. Transfer to a bowl. Add cucumber and toss to coat. Stand 2-3 minutes, then drain.
  4. To assemble, spread butter over one side of cut bread. Spread remaining side with hoisin sauce. Fill roll with lettuce, carrot, cucumber coriander and patties. Top with chilli (optional).
